Slice and brown the sausages in oil. Set aside.
In the same pan, sauté onion until soft. Add garlic, ginger, curry leaves, thyme and chilli.
Add tomato paste, then chopped tomatoes. Simmer 15 minutes until saucy.
Return sausages, simmer another 10 minutes. Finish with chopped coriander.
Serve with steamed rice and lentils (dal).
