Ingredients
- Smoked sausages (saucisses)500 g
- Ripe tomatoes, chopped6 large
- Onions, chopped2 medium
- Garlic cloves, crushed4
- Fresh ginger, grated1 thumb
- Fresh thyme4 sprigs
- Fresh coriandersmall bunch
- Curry leaves8
- Green chillies2
- Vegetable oilTheShop.mu3 tbsp
- Tomato pasteTheShop.mu1 tbsp

Slice and brown the sausages in oil. Set aside.

In the same pan, sauté onion until soft. Add garlic, ginger, curry leaves, thyme and chilli.

Add tomato paste, then chopped tomatoes. Simmer 15 minutes until saucy.

Return sausages, simmer another 10 minutes. Finish with chopped coriander.

Serve with steamed rice and lentils (dal).
