  1. Season chicken and brown in hot oil. Set aside.

  2. Sauté onion, garlic, ginger, thyme, bay, cinnamon and cloves until fragrant.

  3. Add tomato paste, then chopped tomatoes. Cook down 10 minutes.

  4. Return chicken with potatoes and a splash of water. Cover and simmer 35–40 minutes.

  5. Serve with rice and a fresh tomato salad.
