- Onions, sliced2
- Garlic, crushed5 cloves
- Ginger, grated1 thumb
- Tomatoes, chopped4
- Tomato paste2 tbsp
- Thyme3 sprigs
- Bay leaves2

- Potatoes, quartered3 medium

Season chicken and brown in hot oil. Set aside.

Sauté onion, garlic, ginger, thyme, bay, cinnamon and cloves until fragrant.

Add tomato paste, then chopped tomatoes. Cook down 10 minutes.

Return chicken with potatoes and a splash of water. Cover and simmer 35–40 minutes.
