Beef & Black Bean Stir-Fry

  1. Thinly slice beef across the grain. Season with soya sauce and a pinch of baking soda; rest 15 min.

  2. Heat wok to smoking. Add oil and sear beef in batches — 2 min per batch. Remove.

  3. Stir-fry garlic and ginger 20 seconds. Add peppers and toss 2 min.

  4. Return beef. Add black bean sauce and 3 tbsp water. Toss vigorously 1 min.

  5. Finish with sesame oil and spring onions. Serve immediately over jasmine rice.
