Blanch noodles in boiling water 1 minute; drain and toss with a little oil.
Heat wok hot, scramble the eggs and set aside.
Stir-fry garlic, then protein. Add hard vegetables, then noodles.
Add all sauces and pepper. Toss vigorously until smoky.
Add bean sprouts and spring onion at the very end. Serve immediately.
