Ingredients
- Basmati riceTheShop.mu750 g
- Chicken, cut into piecesTheShop.mu1.5 kg
- Plain yogurt300 g
- Onions, sliced (for birista)4 large
- Potatoes, halved4 medium
- Garlic and ginger paste3 tbsp
- Briani / garam masalaTheShop.mu3 tbsp
- Saffron or food colouringpinch
- Fresh mint1 bunch
- Fresh coriander1 bunch
- Whole spices (cinnamon, cardamom, cloves)TheShop.muto taste
- Ghee or oilTheShop.mu150 ml

👨🍳How to cook

Marinate chicken in yogurt, garlic-ginger, masala, salt for 2 hours.

Fry onions until deep brown and crispy (birista). Reserve half.

Fry potatoes until golden. Reserve.

In a heavy pot, layer chicken with marinade, half the birista, mint, coriander, then potatoes.

Parboil rice with whole spices and salt (70% cooked). Drain.

Layer rice over chicken, drizzle saffron milk, ghee and remaining birista.

Cover tightly, cook on low (dum) 45 minutes. Rest 10 minutes before serving.
