  • Eggplant, sliced (optional)

  • Baking powder

👨‍🍳How to cook

    Whisk both flours, baking powder, cumin, turmeric, salt with water to a thick batter.

    Stir in onions, chillies, coriander (and eggplant if using).

    Drop spoonfuls into hot oil at 175 °C; fry until deep golden, 3–4 minutes.

    Drain and serve hot with chutney.
